Founded in 1898 in Tendo City, Yamagata Prefecture, Mitobe Sake Brewery switched to an all-junmai policy in 2010, producing every bottle without added alcohol, pressed slowly through traditional wooden slots rather than a mechanical press. Since 2004, the brewery has cultivated its own rice fields, now spanning 850 ares, and draws on mineral-rich hard water from a source fed by the mountains behind Yama-dera temple.
