Tohokuizumi, whose name evokes the spring from the greatest mountain of the Tohoku, was named in 1933 and is brewed by Takahashi Shuzoten, a brewery founded in 1902 in Yuza Town, Yamagata Prefecture, in the shadow of the Chokai volcano known as the Dewa Fuji. Crystal-clear subsoil water from the Chokai mountain system supplies the brewery, lending Tohokuizumi its clean, rice-forward character. The brewery has earned repeated Gold Prizes at the National New Sake Competition, guided by a commitment to brewing sake that lets the inherent umami of rice take center stage.
