Ota Shuzo in Kusatsu, Shiga Prefecture traces its lineage to the samurai house of Ota Dokan, the 15th-century warrior who built Edo Castle, and the brewery named its sake in his honor when it began production in the Meiji era. The Dokan line uses 100 percent Shiga-grown ingredients, including organically cultivated Yamadanishiki from the brewery's own paddies, and is guided by the philosophy that sake should be an everyday pleasure rather than a special-occasion product. Two expressions from the range have been registered as certified GI Shiga products.
