Nadanosake is brewed by Ota Shuzo, a brewery with ancestral ties to Ota Dokan, the 15th-century samurai lord who built Edo Castle (now the Imperial Palace), and the brand name Chiyodagura references that castle's historic name. The brewery follows the Noto toji style and sources sake rice from Hyogo Prefecture, carrying on the traditions of the Nada district near Kobe, one of Japan's most storied sake-producing regions. Nada's combination of mineral-rich Rokko mountain water, brisk winter winds ideal for fermentation, and coastal access for shipping made it the dominant sake region of the Edo period, supplying an estimated 80% of Edo's sake at its peak.
