스이게이는 술을 즐긴 도사 번주 야마우치 요도의 고사에서 이름을 따왔으며, 1872년 고치현의 해안 성하 마을에서 창업한 양조장에서 비롯됩니다. 양조장의 철학은 '청주는 요리를 돋보이게 하는 조연'이며, 가파른 산비탈에서 흘러내리는 고치의 부드럽고 미네랄이 적은 물이 스이게이 특유의 상쾌한 산미를 만들어냅니다. 2018년에는 간바라 지역의 자연 속에 두 번째 양조 시설 도사구라가 설립되어 전통 기법과 최신 설비를 결합하여 최고의 품질을 추구하고 있습니다.
