Now led by sixth-generation brewmaster Kosuke Arisawa, the brewery follows the motto carefully craft sake until pressing, but do not alter the sake after pressing, employing small-batch unfiltered production and storage at -5°C after bottle pasteurization, with consecutive gold medals at national and regional competitions affirming the approach.
