Arisawa Co., Ltd., established in 1877 in Kami City, Kochi Prefecture, named its Bunkajin brand after the ideal of a woman who excels in learning and culture, signifying a literary beauty. Now led by sixth-generation brewmaster Kosuke Arisawa, the brewery follows the motto carefully craft sake until pressing, but do not alter the sake after pressing, employing small-batch unfiltered production and storage at -5°C after bottle pasteurization, with consecutive gold medals at national and regional competitions affirming the approach.
