Shuto Shuzo has been brewing at the foot of Mount Ishizuchi in Iyo-Saijo, Ehime, for approximately 120 years, drawing on soft water from the Ishizuchi mountain system. Three brothers run the brewery without a hired master brewer, each personally responsible for a single type of sake, completing one batch fully before starting the next. Sukigokoro's daiginjo won gold at the National New Sake Competition for five consecutive years from 2000 to 2004, reflecting the brewery's unhurried, handcrafted approach.
