Kozaemon was launched in 2001 by Nakashima Sake Brewing, a brewery with over 300 years of history founded in 1702 in the mountainous Gifu Prefecture, using subsoil water from Mt. Byobu as its brewing source. Built around the theme of food-friendly sake, Kozaemon spans a wide range from versatile junmai to exquisitely aromatic junmai daiginjo, earning recognition at home and abroad as a label that challenges itself across multiple flavor profiles including umami-rich, sharp, aromatic, and aged kijoshu expressions.
