Sasaichi Sake Brewery traces its origins to 1661 in Otsuki, Yamanashi Prefecture, at the foot of Mount Fuji, where glacial snowmelt filtered through the earth over decades supplies the brewery's water. In 2013 the brewery abandoned factory-scale production and returned entirely to manual koji and yeast mash processes, launching the Dan brand in 2014 as a flagship of this renewed commitment, with the brand's name representing the sun rising over Mount Fuji.
