Tsukasa Botan Brewing has been producing sake in Sakawa, Kochi, since 1603, when an ancestor of the founding family arrived in Tosa Province in the retinue of lord Yamauchi Kazutoyo. The brand name was bestowed by Meiji-era statesman Mitsutake Tanaka, who declared that just as the peony is sovereign among flowers, this sake should stand as sovereign among peonies. Drawing on spring water from the Niyodo River system, one of Japan's clearest waterways, and guided by a commitment to sharp, dry tosa karakuchi character, Tsukasabotan earned all four Gold Prizes at the 2022 U.S. National Sake Appraisal.
