Gyokusendo Shuzo, established in 1806 in Yoro, Gifu Prefecture, draws its brewing water from the legendary Yoro spring system of the Ibuki Mountains, soft ultralow-mineral water below 30 ppm that shapes the house style. The brewery pursues what it calls sake with dignity and a refined palate, combining strict ingredient selection, including Hyogo-grown and Toyama-grown Yamadanishiki and Gifu-native Hidahomare, with both modern machinery and hands-on traditional steps. Reisen, the flagship label named for the Yoro spring itself, aims for taut, clean elegance rather than overt richness.
