Gyokusendo Shuzo, founded in 1806 in Yoro City, Gifu Prefecture, brews Minogiku using water from the Yoro mountain range in a district long celebrated for its extraordinarily soft water, so pure that local legend holds the Yoro waterfall already tastes like fine sake. Maintaining small-batch, handcrafted production for over two centuries, the brewery uses 100% Hida Homare sake rice and continuously challenges itself to refine what it calls the way to produce tasty sake.
