Okutamba

Yamana Sake Brewery, founded in 1716 in the first year of the Kyoho period, is the oldest sake brewery in the Tamba region of Hyogo Prefecture and has been led by the same family for eleven generations. Located in Tamba City, one of Japan's foremost organic farming areas, the brewery maintains an annual production of roughly 500 goku and keeps nearly all processes manual, from sealing bottles to checking returned containers for cracks. In 2011, the brewery converted entirely to junmai-shu production, and the Okutamba brand is brewed by a local Tamba toji whose craft knowledge is rooted in the mountain valley's specific climate and water.
