Kouten Shuzo, established in 1871 in Okaya City, Nagano Prefecture, has been producing sake without sugar additives for over 150 years using 100 percent in-house brewing. The brewery won a Gold Award at the 2012 sake recognition ceremony and continues to operate in the sake-producing tradition of the Suwa region.
