Kiyoizumi

Kusumi Sake Brewery was founded in 1833 in Nagaoka, Niigata Prefecture, and draws its brewing water from a spring rising beneath 200-year-old cedars on the hillside behind the warehouse -- a source formally designated as a Niigata Prefecture name water in 1985. The Kiyoizumi name, meaning clear spring, reflects both the water source and the transparency of the sake style. The brewery is also known for having inspired the manga Natsuko no Sake through its revival of the near-extinct Kame no O rice variety, which became the signature product Kame no翁.
