Joku is brewed at the Gonohe Factory of Hachinohe Shurui, established in 1786 in Gonohe-machi, Aomori Prefecture, where the brewery's well draws from water connected to the Gonohe River. Brewed using Association Yeast No. 10 at low temperatures over extended fermentation periods in the Nanbu tradition, Joku pursues sake that is gracefully pure, rich in umami, and smooth from start to finish. The name Joku reflects the brewery's aspiration to craft sake with an elevated, almost ethereal refinement.
