Choseimai, whose name translates as the dance of long life, is the flagship brand of Kuze Sake Brewery, founded in 1786 in Ishikawa Prefecture and dedicated to brewing sake with the wish for the longevity of those who drink it. The brewery cultivates its own proprietary sake rice, also called Choseimai, in estate fields, and draws on two distinctly different water sources — a hard underground spring just outside the gates and a softer source within the cellar — sometimes blending both in a single tank. The result is a clean, crisp, dry style rooted in traditions that stretch back to the Edo period.
