Notoji is produced by Kuze Sake Brewery, established in 1786 in Ishikawa Prefecture, making it one of Noto Peninsula's most historically rooted breweries. What distinguishes the brewery is its integrated approach: it cultivates its own sake rice in on-site paddies and combines two distinct water sources, hard on-site groundwater and the soft sacred spring Shimizu, sometimes blending both in a single tank to shape the sake's structure. The Notoji brand, named for the road to Noto, reflects the rugged, coastal character of the peninsula.
