Aramasa

Founded in 1852 in Akita City, Aramasa Sake Brewery made history in 1930 when it isolated Kyokai No. 6 yeast on its premises, the foundational strain now underpinning sake fermentation across Japan. Eighth-generation head Yusuke Sato transformed the brewery after 2009, committing fully to Akita-grown rice, No. 6 yeast, the traditional kimoto method, and pure rice classification across the entire lineup by 2015. The result is sake marked by bright, mineral-driven acidity and a restrained aromatic profile that reflects the cool terroir of Tohoku.
