Founded in 1823 at the foot of sacred Mount Haku in Hakusan, Ishikawa, Shata Shuzo has been brewing Tengumai for eight generations, drawing on snowmelt spring water and rice from the surrounding Kaga plains. The brand name means dancing tengu, inspired by the legend that the mountain spirits of Mt. Haku danced with joy upon tasting this sake. Tengumai is distinguished by its commitment to the yamahai method, with intentionally thick koji mold development that produces rich umami character and depth.
