Senkin Shuzo, founded in 1806 in Sakura, Tochigi Prefecture, was rebuilt from near-liquidation in 2008 when brothers Kazuki and Masato Usui took over, with Kazuki applying wine-sommelier knowledge and Masato serving as toji. The brewery now follows a strict domaine philosophy, growing all sake rice on the same underground water vein used for brewing, creating deep connections between land and liquid. Ryusen, named in reference to the Ryusendo limestone cavern, is one of the labels produced within this terroir-focused framework.
