Nakai Shuzoujo, nestled in the mountainous Iga region of Mie Prefecture, produces Mienishiki as a small-batch artisanal sake with an annual output of around 10,800 liters. The brewery is noted for its toji who brings an unconventional background to the craft, and the sake reflects the inland Iga landscape with strong umami balanced by a crisp, dry finish that pairs naturally with the region's mountain ingredients such as local tofu and fermented miso.
