This standard junmai from the Iga, Mie brewery draws on the house philosophy of total-koji making, a technique that drives the koji mold deep into every grain to extract maximum rice sweetness. The result is a full-flavored, food-friendly junmai with the clean, sharp finish the brewery is known for.
