Kano Shuzo was established in 1819 in Ishikawa Prefecture, founded with the name Jokigen — meaning eternal good mood — in the prayer that the blessings shared through sake would never end. In 1998, the brewery persuaded legendary retired Yamahai master Noguchi Naohiko to return to brewing, and over the following 14 years he trained a generation of brewers who continue the full-bodied, sharp-finishing Yamahai tradition he refined.
