Kano Shuzo, founded in 1819 in Kaga City, Ishikawa Prefecture, produces Tsunekigen using subterranean water from Mount Hakusan and sake rice cultivated on the Kaga plains under its own contract farming program. The brewery inherited yamahai brewing techniques from the legendary master brewer Naohiko Noguchi, and Tsunekigen is shaped by that lineage, delivering the rice umami and clean finish characteristic of Kaga regional sake. The brewery also grows its own rice to deepen understanding of how raw material quality shapes the finished sake.
