Imayo Tsukasa Sake Brewery was founded in 1767 in Niigata City, the sake capital of Niigata Prefecture, and converted its entire production to junmai brewing in 2006, eliminating all added alcohol. The brewery is the closest sake kura to Niigata Station and offers daily tours, making it a key destination in the city's sake culture. Among its celebrated products are the 'Koi' series, a gift-category flagship, and the 'Black Imayotsukasa,' a dry junmai beloved under that nickname since its 2017 launch, alongside a revived line of wooden-barrel-fermented sake.
