Azumamine

Azumamine comes from Azumamine Shuzoten in Shiwa Town, Iwate Prefecture, a brewery that traces its lineage to 1684 and identifies itself as the oldest brewing house associated with the Nambu Toji tradition, one of Japan's most celebrated guilds of master brewers. In 2018 the brewery eliminated all non-junmai production, committing exclusively to junmai daiginjo, junmai ginjo, and junmai sake, with all rice grown in Iwate and water drawn from the soft springs of Azuma-ne mountain.
