Established around 1875 in Aizuwakamatsu, Fukushima, Takahashi Shosaku Shuzouten has built Aizu Musume around the philosophy of dosan doho — growing and brewing entirely within the local region. The brewery farms its own rice within three kilometers of the kura, phased out ordinary sake production as early as 1987, and since 2019 has released single-field pure-rice ginjo bottlings under the Jo series, each capturing the distinct character of one paddy.
