Nakaojouzo, brewer of Seikyou, is based in Takehara City, Hiroshima Prefecture, the historic port town known as the Little Kyoto of Aki. The brand name translates as sincere mirror, capturing the brewery's philosophy that each cup of sake reflects the honest heart of the brewer. Seikyou is produced entirely without filtration using heirloom Bizen Omachi rice and a proprietary apple yeast, delivering a complex, rich profile with vivid acidity and a long finish. The brewery was established in 1871.
