Zuisen is produced by Takata Sake Brewing Co., Ltd., a Kumamoto Prefecture brewery that uses crystal-clear water sourced from rock springs nearly 1,000 metres above sea level in the Hitoyoshi Kuma region. Founded in 1899, the brewery emphasizes traditional handcraft methods and quality over quantity, building on Kumamoto's historical reputation as a ginjo-producing region that gained national recognition at the Zenkoku Seishu Hinpyoukai. Takata Shuzojo also produces the acclaimed Asagiri no Hana Kuma shochu using dianthus flower yeast, reflecting the brewery's commitment to original, locally rooted brewing.
