Yamaoka Shuzo is located in Miyoshi, a mountain-ringed town in Hiroshima Prefecture, where the brewery traces its origins to a sake operation active during the Horeki era of the mid-Edo period (1751-1764) and formally re-established in 1897. The Zuikan brand is produced entirely by hand from start to finish, with sake aged before release according to type rather than shipped immediately, a practice that reflects the brewery's emphasis on patience and controlled maturation. Yamaoka Shuzo uses the kimoto method and sources its brewing water from the Arita spring in Konu-cho, recognized as one of Hiroshima Prefecture's finest brewing water sources.
