Founded in 1690 in the Tajima region of northern Hyogo Prefecture, Konotomo Brewery has spent over three centuries perfecting sake rooted in the local terroir of Asago City. The brewery draws on Tajima toji craftsmanship and the natural spring water of the Awajika Mountain range, using exclusively Hyogo-grown rice varieties. Its Daiginjo has earned seven gold prizes at the National New Sake Appraisal, and the range also includes a regionally distinctive spirit called Teno Hiboko.
