Sawanoi is the signature brand of Ozawa Shuzo Co., Ltd., established in 1702 in the Sawai district of Ome, Tokyo, taking its name from the old village name meaning rich mountain spring. The brewery draws on a vein of ancient Chichibu limestone-filtered rock water that rises naturally on the property, producing sake with a character the brewery describes as a refreshing aroma, a full but airy richness, and a clean finish. Ozawa Shuzo was among the first in Japan's sake industry to open its brewery to visitors in 1966 and later established an on-site restaurant, pioneering the model of sake tourism that has since become widespread.
