Founded in 1720 in Kanayama-cho, Gero City at the southern tip of Hida in Gifu Prefecture, Okuhida Shuzo has been brewing sake for more than 300 years using pure underground water from the confluence of the Hida and Maze rivers. Their semi-underground brewery functions as a natural refrigerator, maintaining constant cool temperatures ideal for slow aging and producing the light, dry sake the region is known for. The flagship brands Hatsugoroku and Okuhida take their names from a lord of Owari's description of the brewery as sake from a mountain village surrounded by water and greenery.
