Hatsumidori is one of two main brands from Okuhida Shuzo, founded in 1720 in Gero City, Gifu Prefecture, and is the older of the two, with its name said to have been bestowed by the lord of Owari Domain during the Edo period. The brewery draws subterranean water from 50 meters below ground, fed by the Maze and Hida rivers, and uses locally grown sake rice including Hida Homare. Hatsumidori is bottled unfiltered and bottle-stored, and the line is known for its consistent fruity fragrance and clean finish.
