Yoshimura Hideo Shoten was founded in 1914 in Iwade, Wakayama Prefecture, drawing on the waters of the Kinokawa River to craft its Kurumazaka brand. The brewery is guided by brew master Akiko Fujita, the first female brewer from the Noto Toji Guild in Ishikawa Prefecture, and relies on kimoto and yamahai traditional starter techniques to build robust, food-friendly sake with pronounced umami and a clean finish. Kurumazaka is brewed with careful attention to the relationship between food and sake, producing versatile expressions that complement a wide range of cuisine.
