Kurosawa Sake Brewery, founded in 1858, sits at one of the highest elevations among sake producers in Japan, in the Saku area of Nagano Prefecture, where the pure soft water of the Chikuma River's headwaters and a cold mountain climate create ideal fermentation conditions. Launched in 2004, the Kurosawa brand focuses exclusively on kimoto brewing — a method requiring twice the standard labor — to produce full-bodied, layered sake suited to food pairing, and the junmai ginjo earned a gold medal at the 2012 International Wine Challenge.
