Kirinzan

Founded in 1843 in Aga Town, Niigata Prefecture, Kirinzan Shuzo spent roughly 30 years working alongside local farmers to achieve its goal of sourcing 100% of its rice from the Oku-Aga region, one of the rarest procurement models in Japanese sake. The brewery also plants beech and cedar trees to protect the watershed of the Tokinami River, whose soft underground water defines the clean, dry character of Kirinzan's sake.
