Iwanami is produced by Iwanami Shuzo in the historic castle town of Matsumoto, Nagano Prefecture, where the brewery has operated since 1872 with a distinct philosophy: refusing to make the lean, dry style that dominated Japanese sake trends, instead committing to what it describes as sake where richness and sharpness coexist. All production is sourced in-house with no outsourcing, and the lineup is built around local Nagano rice varieties alongside Hyogo-grown Yamada Nishiki.
