Asahi-Shuzo Sake Brewing Co., Ltd. was founded in 1830 under the name Kubotaya in Asahi, Nagaoka City, Niigata Prefecture, and has pursued a quality-first philosophy across nearly two centuries of continuous operation. The Asahiyama label, named after the village where the brewery was established, emerged during the Meiji period and remains the brewery's second flagship alongside Kubota, drawing on soft underground spring water and locally grown Niigata rice. The brewery has earned recognition both domestically and internationally for its approach to food-complementary, Niigata-style sake.
