Founded in 1901, Yamamoto Sake Brewery in Akita Prefecture draws its brewing water via a 3-kilometer private pipeline from the pristine springs of the Shirakami Mountains, a UNESCO World Heritage Site. The 4th-generation owner-brewer Tomofumi Yamamoto is rare in Akita for holding both roles simultaneously, guided by the philosophy Don't drink sake with your head. Drink it with your heart. The brewery is a member of NEXT5, a group of five young Akita brewery leaders who have shaped the modern face of Akita sake, and the Yamamoto brand is praised internationally for its white wine-like fragrance and clean balance.
