Founded in Meiji 34 (1901). For many years, the flagship brand was "Shirotaki," named after a waterfall behind the brewery.

With the brewery on the verge of bankruptcy in 2007, successor Yamamoto made the bold decision to abolish the traditional toji (master brewer) system. In an all-or-nothing first year of brewing, a miraculously delicious junmai ginjo was born, and on the advice of a local sake shop, the new "Yamamoto" brand was created.
