Namagenshu (unpasteurized, undiluted) junmai ginjo from Sudo Honke in Kimitsu, Chiba, retaining full alcohol concentration and the vibrancy of unheated sake. Brewed with Yamada Nishiki and the brewery's rare deep-aquifer spring water, which produces a soft, clean mouthfeel. Specific polishing ratio is not publicly disclosed.
