Sakuramuromachi is produced by Muromachi Shuzo, established in 1688 in what is now Akaiwa City, Okayama Prefecture, one of the oldest breweries in the prefecture. The brewery uses 100% Bizen Omachi rice — a heritage variety called the phantom sake rice — polished from water drawn from the famed Omachi no Reisen spring, a designated top-100 water source in Japan, producing sake characterized by full umami and a dry backbone; the lineup has earned gold medals at the Monde Selection and first-place recognition at multiple international competitions including the IWSC and BTI.
