Ninki Inc. in Nihonmatsu City, Fukushima Prefecture, operates with a strict house policy of producing only ginjo-class sake, polishing every batch to 60% or less, and fermenting in large wooden barrels made from century-old Japanese cedar. All sake is bottled immediately after pressing to minimize air exposure, and the Ninkiichi label has taken Gold at both the National New Sake Appraisal and the Wine Glass Delicious Japanese Sake Award.
