Myoukousan is the flagship brand of Myoko Shuzo Co., Ltd., founded in 1815 in Joetsu, Niigata, with the stated motto of brewing sake of grace and dignity. The brewery cultivates its own Gohyakumangoku rice for use in the lineup and draws water from a 130-meter well tapping the subterranean flows of the Myoko mountain system, which provides a mineral-bearing softwater base suited to pulling out the rice's natural richness. Head brewer Hirayama Masayuki, the first person in Niigata to receive dual recognition as a Niigata Master Craftsman and Zengiren Meister, leads production using a distinctive technique of blending multiple proprietary yeast strains to achieve a clean acid balance and refined fragrance.
