百歳
百歳は、1625年創業の金沢市最古の酒蔵・福光屋が手がける長期熟成酒のシリーズである。福光屋は早くから長期熟成に取り組み、百歳は熟成10年・20年・30年で最良の状態を迎えることを想定したシリーズとして設計されており、通常の酒では難しい食材との組み合わせを可能にしている。仕込み水には、霊峰白山から地下約150メートルを経て百年かけて湧き出るとされる「百年水」を使用している。
