Kanae is produced by Shinshu Meijo in Ueda City, Nagano, a brewery established beside the Yoda River specifically for access to high-quality brewing water from the Chikumagawa watershed. The brewery applies both traditional and modern techniques to handcraft sake with a focus on consistency and quality. Kanae sits alongside Kikusakari as one of the two brands produced by Shinshu Meijo, rooted in Nagano's alpine sake tradition.
