Juisshu

Nippon Seishu, based in Hokkaido, introduced Juisshu as a new brand in 2010 from its Tanchō Gura brewery, reviving a name that traces back to the Meiji era when a predecessor brewery distributed sake across what was then an eleven-country administrative division of Hokkaido. The brand uses only Ginfuu, a Hokkaido-grown sake rice variety cultivated under contract in Shintotsukawa, making it a fully local expression of Hokkaido terroir. Juisshu is available in a range from junmai daiginjo, described as carrying a light melon-like ginjo fragrance and smooth texture, to junmai ginjo expressions designed as refined food companions.
