Founded in 1818 in Hitachi-Ota City, Ibaraki Prefecture, Adachi Shuzo Co. has built its Hinodetsuru brand through generations of brewing rooted in the cold, clean conditions of Ibaraki's Satomi District. The brewery has historically worked with brew masters from the prestigious Echigo Toji tradition of Niigata and is currently developing its own regional brewing identity. Hinodetsuru also collaborates with the local community to cultivate sake-brewing rice suited to the land.
